Lemon Poppy Seed Cake

1 cup butter or margarine, softened
2 cups sugar
6 eggs
3 cups all-purpose flour
1/2 teaspoon baking soda
1 cup sour cream
2 tablespoons poppy seed
1 tablespoon pure lemon extract
1 teaspoon pure vanilla extract
Lemon Glaze:
1 1/2 cups confectioners' sugar
2 tablespoons water
1/2 teaspoon pure lemon extract
Fresh fruit or berries, optional
1. Preheat oven to 325°F. Cream butter in a large
mixer bowl. Gradually beat in sugar, 1 tablespoon
at a time. Beat until light and fluffy, about 7 minutes.
Add eggs, one at a time, beating after each addition.
In another bowl, combine flour and baking soda; stir
half of mixture into butter mixture. Stir in sour cream,
then remaining flour mixture. Stir in poppy seed and
extracts. Spoon into a greased 10-inch bundt pan.
2. Bake 60-65 minutes or until toothpick inserted in
center comes out clean. Cool 15 minutes; turn pan out
on wire rack and cool completely.

allowing some to run down sides. Slice and serve with
