Candied Orange Cake



Ingredients:

  • 1 1/3 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk
  • 2 tablespoon olive oil
  • 2 tablespoon butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 5 Candied Orange Slices, chopped (about 3/4 cup) (recipe below)
  • Candied Oranges Slices (see recipe)

Directions:

1. Preheat oven to 350 degree F. Lightly grease and flour a 9 x 1 1/2-inch round baking pan; set aside.

2. In a large mixing bowl combine the flour, sugar, baking powder, and salt. Add milk, oil, butter, egg, and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 1 minute. Stir in chopped Candied Orange Slices. Pour batter into prepared pan.

3. Bake for 25 to 30 minutes or until a wooden toothpick inserted near the center comes out clean. Remove and cool in pan on a wire rack for 10 minutes. Remove cake from pan. Cool completely.

4. Place cake on a serving plate. Arrange Candied Orange Slices on top of cake. Drizzle with 1 tablespoon of the orange syrup. Makes 8 to 10 servings.

Candied Orange Slices: Trim ends from 3 navel oranges; slice into 1/4 inch thick slices. In a large saucepan combine 2 cups sugar and 1 cup water. Bring to boiling; add orange slices. Return to boiling. Reduce heat to medium and boil gently, uncovered, for 12 minutes, gently stirring orange slices into syrup occasionally. Remove from heat. Preheat oven to 200 degree F. Line a very large baking sheet with parchment paper. Remove orange slices from syrup using tongs or a fork, reserving syrup. Arrange orange slices on prepared baking sheet. Bake for 1 hour or until oranges are translucent and candied, but still soft. Remove from oven; cool completely on baking sheet. Store in an airtight container. Transfer syrup to a small bowl and chill until needed.

Three-Layer Lemon Cake



Ingredients:

  • 1 cup butter, softened
  • 4 eggs
  • 2-1/3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups sugar
  • 2 teaspoons finely shredded lemon peel
  • 2 tablespoons lemon juice
  • 1 cup buttermilk or sour milk
  • 1/2 recipe Lemon Curd (recipe follows) or 1 cup purchased lemon curd
  • 1 recipe Lemon Cream Cheese Frosting (recipe below)
  • Lemon peel curls (optional)

Lemon Curd:

Ingredients:

Makes 1 1/2 cups

  • 6 large egg yolks
  • Zest of 2 lemons
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • 12 tablespoons sugar
  • 1/2 cup (1 stick) unsalted butter, cold, cut into pieces
Directions:
  1. Prepare an ice bath fitted with a medium bowl; set aside. Whisk together yolks, zest, juice, and sugar in a small saucepan. Set over medium heat, and stir constantly with a wooden spoon. Cook until mixture is thick enough to coat the back of the wooden spoon, 5 to 7 minutes.
  2. Remove pan from heat. Add butter, 1 piece at a time, stirring until incorporated. Pass through a fine mesh sieve into prepared medium bowl. Stirring frequently, let stand until cool.
  3. Place a sheet of plastic wrap directly on surface of curd to prevent skin from forming; wrap tightly. Refrigerate until firm and chilled, at least 1 hour. Store refrigerated in an airtight container for up to 2 days.

Directions for layer cake:

1. Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour three 9 x 1-1/2-inch round cake pans. Combine flour, baking powder, soda, and salt. Set aside.

2. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, lemon peel, and lemon juice; beat until well combined. Add eggs, 1 at a time, beating well after each. Add flour mixture and buttermilk or sour milk alternately to beaten mixture, beating on low speed after each addition just until combined. Pour into prepared pans.

3. Bake in a 350 degree F oven for 25 to 30 minutes or until a wooden toothpick comes out clean. Cool cakes in pans on wire racks for 10 minutes. Remove cakes from pans. Cool thoroughly on wire racks.

4. To assemble, place a cake layer on a cake plate. Spread with half of the Lemon Curd. Top with second layer; spread with the remaining Lemon Curd. Top with third layer. Frost top and sides with Lemon Cream Cheese Frosting. Cover and store cake in the refrigerator for up to 3 days. Let stand at room temperature for 30 minutes before serving. If desired, garnish with lemon peel curls. Makes 12 servings.

Lemon Cream Cheese Frosting: Finely shred 1 teaspoon lemon peel; set aside. In a medium mixing bowl combine two 3-ounce packages cream cheese, softened; 1/2 cup butter, softened; and 1 teaspoon lemon juice; beat with electric mixer on low to medium speed until light and fluffy. Gradually add 2 cups sifted powdered sugar, beating well. Gradually beat in 2-1/2 to 2-3/4 cups additional powdered sugar until spreading consistency. Stir in the lemon peel.
